Yes it may be hard to fit everything to one page, but if you cut out some filler words and get straight to the point you should be able to make it fit. Employers want to be able to browse through and know who you are. They dont have time to sit and read a novel. I completely agree with all those points that you stated. I don't have a problem with 2 page resumes, but for a college student like myself, it sometime works better to keep it to one since 2 pages can get separated and a staple is tacky.
